INGREDIENTS
2 strawberries
¾ oz St Germain
4-5 sage leaves
2 oz Broker’s Gin
½ oz lemon juice
1 oz heavy cream
½ oz simple syrup
1 egg white
5-6 drops orange blossom water
Topped with soda water
METHOD
Muddle the strawberries and sage with lemon juice and simple syrup. Add the orange blossom water, St Germain, Broker’s Gin, and heavy cream. Fill the glass with ice. Separate the egg white on top of the ice and shake vigorously for several minutes to create a good froth. Serve in a Collins glass with no ice. Top with soda water to extend the froth to the top of the glass. Garnish with a sage leaf.
